Peach Pie
This peach pie is different in that it do away with the use of soda or those peaches marinated with some spirit. This is my very own version, so you might want to check it out and see if this becomes another one of your favorites.
Serves: 8
Prep time: 5 minutes
Cook time: 55 minutes
Ingredients:
3 cups peaches, cut into large, bite-sized chunks
4 eggs, large
2 cups heavy cream
3 ounces almond paste, crumbled
4 tablespoons brown sugar
1 tablespoon vanilla extract
Instructions:
1. Preheat the oven to 375 degrees F.
2. Put the pastry dough on a round pie plate. Poke the pastry lightly.
3. Place inside the oven and prebake. Remove the pie. Set aside.
4. Meanwhile, combine eggs, heavy cream, vanilla extract, almond paste, and brown sugar in a large bowl. Mix well until all ingredients come together.
5. Layer peaches to the pastry shell. Pour the egg mixture.
6. Preheat the oven to 350 degrees F.
7. Place inside the oven and bake for 45 minutes until firm. Let slightly cool before slicing and serving.
Fresh Fruits with Chantilly
Fresh fruits such as bananas, strawberries, and blueberries with chantilly is a perfect dessert for just about any time of day. The sweetness and fruitiness of this dessert makes it a perfect substitute for the usual slice of cake or ice cream for dessert.
Pro tip: Chill the bowl where you will place the heavy cream. This way, the cream will turn fluffier and beat faster. In this recipe, I specifically used fresh strawberries, blueberries, and bananas, but you can always choose fruits that are in season. To make the dish extra special, you may choose to add some roasted nuts.

Blueberries
Bananas
1 teaspoon lemon juice
For the Chantilly
Whipping cream
Powder sugar
Vanilla sugar
Instructions:
1. Combine strawberries, bananas, and blueberries in a bowl. Mix well. Add in sugar and lemon juice. Stir. Set aside.
2. Meanwhile, in a chilled bowl, combine powder sugar, whipping cream, and vanilla sugar. Mix until soft peaks form.
3. To serve, place mixed fruits in a dessert bowl. Put a dollop of the Chantilly. Serve.
Mangoes with Rum and Vanilla Ice Cream
You will never go wrong with mangoes for dessert. Add some rum and vanilla ice cream and you'll surely won't mind having this dessert over and over again.
Pro tip: The longer you soak the mangoes with rum, the better they will be infused and therefore more flavorful.
Don't forget to chill the serving cups, so the ice cream won't melt fast.

Ingredients:
2 ripe mangoes, peeled, sliced into ½ inch
2 tablespoons dark rum
1 tablespoon lime zest, grated
3 tablespoons sugar
3 tablespoons lime juice
Instructions:
1. Put together dark rum, rind, sugar, and lemon-lime juice in a bowl. Stir well. Add in mangoes. Mix until well coated.
2. Place inside the fridge for 2 hours.
3. Use chilled glasses to serve. Top mangoes with vanilla ice cream.
