Wine Steamed Cod with Cauliflower Potato Mash and Chestnut Brussel Sprouts
This dish is overwhelming with the goodness of vegetables and the protein that you will get from cod. What's more fun is that you can cook it with just a very simple instruction. For the side dish, just combine cauliflower and potato, and mash them. The texture may be thicker, but it is equally delicious. If you want to have a smoother consistency, blend the cauliflower florets first.
As for the Brussel sprouts, you can just blanch them to eliminate the bitterness. And the chestnuts? Everybody loves them! The vegetables and chestnuts together with the cod fillets make for a filling dish. You don't really need rice for this one.

Cook time: 25 minutes
Ingredients:
4 cod fillets
1/2 cup white wine
2 tablespoons unsalted butter
Instructions:
1. Melt the butter in a skillet set over medium heat. Once hot, add in cod pieces. Saute for 3 minutes on each side.
2. Pour white wine and cook until the wine evaporates.
3. Serve with mashed cauliflower and potatoes, Brussel sprouts, and chestnuts.
Roasted Salmon with Shallots and Grapefruit Sauce
Salmon is almost always a go-to dinner for many people apart from chicken. For variety, make grapefruit sauce. Just ensure that you take away the membrane of the fruit, so the sauce won't be bitter. Once you remove the pulp, squeeze the juice, and then discard it.
This dish is done in less than 40 minutes, so you won't have everyone waiting too long. This can also be prepared for special occasions and on days when you don't know what else to prepare for the family. You only need the usual ingredients that can easily be found in the fridge or in your pantry. Plus, if you have a grapefruit tree in your backyard just like me, you sure will never run out of ideas to prepare and cook using this fruit.

Ingredients:
4 salmon fillets, skinless
1 grapefruit, membrane removed, cut into segments
3 teaspoons honey
2 teaspoons butter, unsalted
2 tablespoons shallots, minced
1 teaspoon ginger, grated
Dash of red bell pepper flakes
2 teaspoons fresh flat-leaf parsley, chopped
2 teaspoons lemon juice
1 tablespoon brown sugar
1 teaspoon butter, unsalted
Instructions:
1. Preheat the oven to 375 degrees F. Line a cookie sheet with aluminum foil.
2. Place salmon on the prepared cookie sheet. Put inside the oven and roast for 20 minutes.
3. Meanwhile, heat butter and oil in a skillet set over medium heat.
4. Sauté shallots for 2 minutes or until translucent.
5. Add in lemon juice and brown sugar. Adjust to your preferred taste. If the sauce is too bitter, add more sugar.
6. Add in 1 teaspoon butter and parsley. Turn off the heat. Let residual heat melt the butter. Mix until all ingredients come together.
7. To plate, put salmon in the middle of a plate. Spoon the sauce all over. Serve.
