Skillet Roasted Cornish Hen

This is a simple recipe that only takes 40 minutes to cook and less than 5 minutes to prepare. The only difference is that I place a bread on the skillet before putting the hen on it. So expect that this dish doesn't have the juices all over the hen. The bread absorbs all the fat, so this is definitely a healthier version. You may discard the bread afterwards. But don't worry, the Cornish hen stays crisp, moist, and nicely done. It's a family favorite, and I'm sure it will also be on your dinner table.
Ingredients:
Cornish hen
2 bread slices
fresh tarragon
1 lemon, quartered
Instructions
1. Preheat the oven to 375 degrees F.
2. Meanwhile, place bread slices on the skillet. Place the Cornish hen on top of the bread. Season with salt and pepper. Insert fresh tarragon and quartered lemon.
3. Tie the legs of the hen together. Sprinkle generous amount of salt and pepper all over the hen. Lightly brush with oil.
4. Place inside the oven and bake for 40 minutes. Poke the breast and thighs to make the juices run out.
5. Once cooked, remove from the oven. Let sit for 5 minutes to cool before carving. Serve.
Chestnut Stuffed Turkey
Serves: 8
Prep time: 20 minutes
Cook time: 4 hours
This one's for Thanksgiving and for other special occasions you want turkey to take center stage.
Ingredients:
2 yellow onion, peeled, chopped
2 tablespoons butter, unsalted
6 ounces bacon, sliced, cut into strips
8 ounces sausage meat
1 breakfast sausage, casing removed
1 apple peeled, cored, chopped roughly
Dash of cinnamon
Dash of dry mustard
Pinch of pepper
Dash of ground cloves
24 chestnuts, steamed
1 turkey, cleaned, patted dry
thick slices bacon
Instructions:
1. Preheat the oven to 375 degrees F.
2. Meanwhile, heat the butter in a skillet. Cook the onions and bacon for 3 minutes or until crisp. Add in breakfast sausage and sausage meat.
3. Add in apple to the meat mixture. Stir in cinnamon, dry mustard, pepper, and ground cloves. Season with salt and pepper. Stir mixture well. Cook until all meats are cooked.
4. Remove from heat. Add in chestnuts. Work the stuffing to incorporate meat and chestnuts well. Just make sure not to mash.
5. Stuff the turkey's neck with the prepared stuffing. Close the opening.
6. Transfer the turkey to a cooking pan over a roast rack. Season turkey with salt and pepper. Grease with olive oil.
7. Cover turkey's breast with bacon slices and then tent using an aluminum foil. Cook for 20 minutes per pound.
8. Ensure that you poke the breast and thigh parts using a fork so that the juices of the turkey will come out.
9. Baste with any juices or white wine if using from the pan.
10. Once the turkey is cooked, remove from heat. Let sit for 10 minutes.
11. Once cooled, carve the turkey. Serve with apple slices in butter and chestnuts.
