Raspberry Fool
This sinfully delicious Raspberry parfait is so easy to do that even your children can help in the preparation. It is super delicious and is perfect to serve after a hearty meal.
Serves: 2
Prep time: 20 minutes
Cook time: 10 minutes
Ingredients:
3 cups raspberries, fresh, set aside some for garnish
2/3 cup whipping cream
2 tablespoons water
1/3 cup sugar
Instructions:
1. Combine raspberries together with water and sugar in a saucepan set over medium heat. Bring mixture to a boil.
2. Once boiling, reduce to a simmer for 20 minutes or until the sauce thickens.
3. Drain raspberries and press using a fine sieve. Set aside to cool.
4. Meanwhile, whisk whipping cream in a bowl. Beat until soft peaks form.
5. Fold berries into the cream mixture. Spoon into a glass or goblets. Garnish mixture with 1 fresh raspberry per glass before serving.
Deep Chocolate Pound Cake
What's not to love about chocolate? What more if it's a cake! This delicious pound cake contains only half the butter with extra chocolate chips, honey as sweetener, and cranberries. This sure is something to bake for the family that will definitely bring huge smiles to their faces. Not to mention, a healthier version.

Cook time: 1 hour
Ingredients:
2 eggs
2 1/2 cup all-purpose flour, unbleached
1/4 cup cocoa powder, unsweetened
1/2 cup sour cream
1/4 teaspoon baking soda
3/4 cup sugar
1 teaspoon vanilla extract
2 tablespoons boiling water
1 teaspoon baking powder
1/2 cup bittersweet chocolate chips
1/4 cup honey
1/2 cup dried cranberries
1/3 cup caster sugar
3/4 teaspoon fine salt
1/2 cup whole milk
1 stick butter
Instructions:
1. Preheat the oven to 350 degrees F. Place the rack in the center of the oven.
2. Using a Bundt cake pan, grease with butter and put flour all over. Dust the bottom of the pan with caster sugar.
3. Meanwhile, put together baking powder, baking soda, flour, and salt in a bowl. Pour milk and then stir in sour cream in another bowl.
4. Add in sour cream and milk in a small bowl. Sift cocoa and add in honey together with 2 tablespoons of boiling water. Whisk until the mixture is smooth. Set aside and allow to cool completely.
5. Beat butter and sugar in another bowl using an electric mixer. Beat for 3 minutes or until a fluffy consistency is achieved.
6. Beat an egg one at a time. Add in vanilla and cocoa mix. Beat until smooth whilst occasionally scraping the sides of the bowl. 1 at the time, occasionally scraping down the sides of the bowl.
7. Beat in sour cream and the flour mixture alternately including 2 additions each until all ingredients come together.
8. Fold in dried cranberries and chocolate chips.
9. Transfer the batter to the prepared bundt pan. Use a spatula to smoothen the top of the cake.
10. Place inside the oven and bake for 1 hour. Do the toothpick test. If the toothpick comes out clean, your cake is done.
11. Remove from the pan and let cool. Dust with powder sugar. Slice and serve.
