Ingredients:
3 eggs, large
6 poblanos
1/3 cup all-purpose flour, unbleached
Queso Fresco
Oaxacan cheese
Instructions:
1. Roast fresh poblanos in an open flame, turning constantly to avoid burning. Roast until skin is charred.
2. Place roasted poblanos in a plastic bag. Allow to sweat for 10 minutes. Remove skin once cooled.
3. Create a small incision and remove the seeds. Put cheese on the inside of the poblanos.
4. Meanwhile, heat the oil in a skillet. Beat the egg white in a bowl until soft peaks form. Add in yolks. Season with salt. Whisk until all ingredients come together.
5. Dust chiles with flour. Dip into the eggs until well coated.
6. Once the oil is hot, place the chile in the hot oil. Turn the other side and cook until golden.
7. Remove from the skillet and drain on paper towels. Serve.
Habanero Pasta with Prawns
This dish comes with cream, wine, and garlic sauce. The addition of prawns along with the pasta make for a delicious recipe. The sauce blends perfectly well with the prawns and creates a complimenting flavor. Definitely a must try.

Ingredients:
Habanero pasta
12 prawns, deveined
3 springs fresh thyme
1 cup white wine
1 garlic clove, sliced thinly
6 tablespoons butter, unsalted
1/3 cup whipping cream
1 tomato, sliced, deseeded
Instructions:
1. Pour water with salt in a large pot. Once boiling, place the pasta.
2. Meanwhile, melt the butter in a skillet. Add in garlic, whipping cream, thyme, and wine. Cook for 5 minutes or until the wine has evaporated. Add in tomatoes.
3. Season prawns with salt and pepper. Transfer prawns to the skillet and cook for 5 minutes or until all prawns turned pink.
4. Drain the pasta and transfer to the prawn mix. Add in remaining butter. Cook for additional 2 minutes whilst tossing pasta.
5. Transfer cooked Habanero pasta to a platter. Serve.
Stovetop Mac and Cheese

We all love mac and cheese. The below recipe will make you want to try and make this at home. It's simple, delicious, and oh so gooey. And of course, with loads and loads of cheese.
8 cups elbow macaroni, cooked
8 slices bacon, cut 1/4 inch thick
2 tablespoons unbleached all-purpose flour
2 cups whole milk, warm
1/4 teaspoon ground dry mustard
1/4 teaspoon Worcestershire sauce
1 1/2 cup sharp cheddar cheese, shredded
1 1/2 cup American cheese, shredded
1 teaspoon salt
1/4 teaspoon hot sauce
1 tablespoon fresh chives, minced
Instructions:
1. Cook bacon in a cast iron skillet set over medium heat. Cook until the bacon is crisp for about 5 minutes. Set aside. Reserve bacon fat.
2. Meanwhile, cook pasta according to package instructions.
3. Beat flour into the reserved bacon fat. Cook for 2 minutes whilst stirring. Add in mustard, milk, hot sauce, Worcestershire sauce, and salt into the mixture. Let simmer for 15 minutes or until the mixture thickens.
4. Remove from heat. Add in American and cheddar cheeses. Stir until melted. Add in macaroni, bacon and chives. Serve.
