Warm Potatoes with Cilantro and Lime
Potatoes always take center stage during dinner time. It is deliciously filling and is definitely easier to prepare and cook. Apart from this, potatoes are versatile food and can complement just about any kind of dish. If you find it hard to think of a dish to cook, this is a sound option.
This recipe gave potatoes a different twist, this time with cilantro. This also has some garlic in it, and lime juice and zest, which soften the garlic's pungent taste.
Serves: 4
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients:
8 small new potatoes, preferably the same size, cleaned
2 limes, freshly juiced
1 lime zest
1 garlic clove, minced
1/4 cup cilantro, chopped
3 tablespoons olive oil, for drizzling
Pinch of salt
Pinch of pepper
Instructions:
1. Whisk garlic, cilantro, lime juice, and lime zest in a small bowl.
2. Place cleaned potatoes in a large saucepan. Pour salted water over it. Bring to a boil. This usually takes 10-15 minutes or until the potatoes are fork tender. Drain.
3. Run cooked potatoes under cold water. Make sure all potatoes are cooled before peeling them.
4. Crush potatoes using a fork, but do not mash.
5. Season potatoes with salt and pepper. Add in the cilantro and garlic mix. Drizzle olive oil all over. Serve.
Pork chops in Mango Habanero Sauce
Habanero and mango are just the right combo. There is sweetness and hotness combined, and the good thing is that both complement each other. This is a perfect spring dinner that you can cook in a little under 15 minutes. Marinade the pork chops ahead of time, so you can just prep and cook in an instant. This dish has the potential to be an all-time favorite.

Prep time: 5 minutes
Cook time: 15 minutes
Ingredients:
Pork chops
4 6-ounces pork chops, bone in
2 garlic cloves, minced
1/4 cup fresh cilantro, chopped finely
1/4 cup cream of sherry
1/2 cup parsley, flat leaf chopped finely
Pinch of salt
Pinch of pepper
1/4 cup olive oil
Sauce
1/4 cup Chardonnay
1/2 teaspoon habanero, minced
2 mangoes, ripe, peeled
1/4 cup orange, freshly juiced
cilantro, optional, for garnish
Instructions:
1. Tip: Marinate ahead of time. To do this, combine parsley, garlic, cilantro, olive oil, and sherry in a shallow dish. Season with salt and pepper. Add in pork chops and toss well to coat.
2. Press the herbs on the chops. Let sit for 30 minutes or overnight. Turn occasionally.
3. To make the sauce, put together orange juice, mango, and Chardonnay in a blender. Blend until the mixture is smooth. Add in habanero. Set aside.
4. For the pork chops, season with salt and pepper.
5. Meanwhile, heat oil in a skillet. Once hot, place pork chops, turning occasionally. Cook for 5 minutes on each side, depending on the thickness of the meat.
6. Drizzle in sauce all over while cooking. Once cooked, drizzle in remaining sauce. Serve.
