� cup of sun-dried tomatoes in oil, sliced thin

Vegetables, for serving: Cucumber (cut as rounds and peeled) and endive leaves
Instructions:
Use a medium-sized bowl and put in the lemon zest, softened cream cheese, and softened goat cheese.
Add salt and pepper before beating with an electric mixer.
Beat the mixture until it is fluffy and well-combined.
On toasted baguette slices, endive leaves, cucumbers, or water crackers: Add a spoonful of the cheese mixture. Serve to your guests, and admire their delighted faces.
Mousse of Cantaloupe
This is one of those Italian recipes that looks light, but will surprise your friends because it�s very rich in flavor.
Time for preparation: 10 minutes
Time for refrigerate: 2 hours

7 ounces of prosciutto (for the mousse)
4 ounces of cream cheese
4 slices of prosciutto (thinly sliced)
2 tablespoons of butter (without salt)
1 small cantaloupe
Instructions:
Prepare the cantaloupe. Peel off the outer skin and put away the seeds. Cut the cantaloupe into chunks.
Add the prosciutto and butter into a blender. Set the speed to medium and blend well for 30 seconds.
Add cream cheese into the blender and blend for 30 or 40 seconds. Then add in the cantaloupe chunks and blend until the consistency is creamy.
Put mixture in the refrigerator to set for 3-4 hours until you�re ready to serve.
Assemble the mousse. In small glasses, add in the mousse and garnish each glass with 1 slice of prosciutto.
Salmon Canapes
Canapes look fancy but are actually easy to prepare. This recipe features a healthy portion of smoked salmon for flavor-packed appetizers.

Time for cooking: 5 minutes
Total time spent: 20 minutes

Ingredients:
Smoked salmon (8 ounces, sliced thin)
Sprigs of dill
Sour cream (� cup)
French baguette (1)
Cream cheese (8 ounces, softened)
Instructions:
Preheat your oven to 400F.
Cut French baguette into 24 pieces. Make sure each piece is � inch thick, enough for one bite. Place the rounds on a baking sheet.
Position your oven rack in the middle. Let the baguette rounds bake until lightly toasted for 5 minutes.
Chop the smoked salmon into 24 pieces. On each baguette round, spread some cream cheese before putting the sour cream and smoked salmon on top.
Before serving, add a sprig of dill to each canape.
