Vegetables, if prepared right, can turn into awesome side dishes for meals. It doesn�t always need to be a stir-fry. Sometimes, all you need to make magic happen is a few minutes with fresh ingredients.

This is one of those French recipes that doesn�t need a lot of effort.
Prep: 10 minutes
Cook: for 20 minutes

Ingredients:
Thyme (fresh)
Salt and pepper
1 squash (sliced into small rounds)
Olive oil
Cherry tomatoes (18 ounces, cut)
2 zucchinis (sliced into small rounds)
Yellow onion (�)
1 tablespoon of butter (no salt)
Instructions:
Generously butter a heavy-cast, enamel gratin dish. Be sure to get the sides and the bottom. Alternate the squash and zucchini rounds and spread them on the dish. In the middle, put the tomatoes.
Set your oven to 350F and preheat.
Over medium heat in a small skillet, add 1 teaspoon of olive oil. Cook the onion until translucent. Add some salt, pepper, and fresh thyme while it cooks.
After 5 to 8 minutes, sprinkle the onion over the tomatoes, zucchini, and squash. Season the dish with olive oil, salt, pepper, and thyme.
Put the dish in the oven and bake for 15 to 20 minutes.
Serve at room temperature or hot.
Garlic Potatoes
A delicious helping of garlic potatoes can be the perfect side dish for meat or poultry. If you love butter, add this to your weekly menu immediately. While it does take around 40 minutes to cook, you only need 5 minutes to set up this dish for success.

Cooking time: 40 minutes
Total time needed: 45 minutes

Ingredients:
4 small potatoes (peeled and sliced thin)
6 garlic cloves (unpeeled, crushed, without the hard ends)
Unsalted butter (5 or 6 tablespoons, melted)
Instructions:
Preheat the oven to 400F.
Slice potatoes until they are 1/8 inch and keep the slices together. This is even simpler if you have a mandoline.
In a cast-iron skillet, add some melted butter. Swirl your pan and be sure the sides and bottom are coated.
Put the potato slices into the skillet. Keep the slices evenly spaced and add in garlic cloves.
Lightly brush melted butter onto the potatoes. Add salt and pepper to taste.
Bake the potatoes in a hot oven until golden-brown and tender, for about 30 to 40 minutes.
Optional: You can garnish with rosemary if serving with lamb chops, or garnish with thyme if serving with poultry and other meats.
Roasted Broccolis with Thai Chili Soy
One of the best recipes is when you can set it in the oven and forget it until you need to serve.
Prep time: 5 minutes
Cooking time: 15 minutes
Total time needed: 20 minutes
Good for: 4 people
Ingredients:
Olive oil (2 tablespoons)
Salt and Pepper
Broccolis (1 pound)
Garlic cloves (2 pieces, chopped fine)
Thai Chili soy sauce (2 tablespoons)
Preheat the oven to 375F.
Cut your broccoli into florets. Try to keep them all the same size, so they cook evenly.
Add olive oil, salt and pepper, garlic, and soy sauce. Mix well with the broccoli.
Put the broccolis in a cookie sheet lined with aluminum. Make sure you place them flat. Bake in the oven for 15 minutes.
Armed with these side dishes, you don�t have to settle for bland vegetables any longer.
