Tuna Salad with lettuce and Tomatoes Sandwich
Prep time: 15 minutes

Ingredients:
2 cans white tuna, drained
Tomato slices
4-6 slices of bread
Lettuce leaf
1 small celery rib, finely diced
¼ tsp mustard powder
½ tsp lemon pepper
1/3 cup low-fat mayonnaise
2-3 drops Tabasco sauce
Pinch of salt, to taste
3 tbsp. sweet pickle relish
2 tbsp. fresh lemon juice
1 green onion, chopped
Directions:
1. Drain the tuna then press it with a fork to make sure that you squeeze out excess moisture. Place it in a bowl. Flake it with fork.
2. Add all of the remaining ingredients except for the bread slices, tomato and lettuce. Stir the mixture until combined. Adjust seasoning as desired.
3. Cover the bowl with plastic wrap and place it in the refrigerator for 2 hours.
4. Spread it into bread slices. Top with tomatoes and lettuce leaves before serving.
Sweet Potato Pie
Prep time: 20 minutes – can be made ahead
Cook time: 40 minutes
Ingredients:
1 lb sweet potato
2 eggs
½ tsp ground nutmeg
1 9-inch unbaked pie crust
½ tsp ground cinnamon
1 cup white sugar
1 tsp vanilla extract
½ cup milk
½ cup butter, softened
Directions:
1. Boil the sweet potatoes with the skin for about 20 minutes until it is done. Run cold water over the potatoes and peel off the skin. (This can be made ahead)
2. Break the sweet potatoes in a bowl. Add the butter and stir well using a mixer.
3. Add the sugar, eggs, cinnamon, vanilla, milk and nutmeg. Whisk the mixture at high speed until smooth. Pour the mixture into the pie crust.
4. Bake for 350 degrees for 40 minutes or until a knife inserted in the middle comes out clean. The pie should look like a soufflé but will sink back down when it cools.
Baked Mushrooms and Cauliflower
Prep Time: 10 minutes
Cook time: 40 minutes
Ingredients:
3 cups cauliflower flowerets
1/3 cup green onion, chopped
2 garlic cloves, finely chopped
2 teaspoons apple cider vinegar
1 cup fresh mushroom, chopped
½ cup red onion, chopped
2 teaspoons lemon juice
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon olive oil
Directions:
1. Preheat oven to 350°F. Spray a square baking pan with cooking spray.
2. In a bowl, mix cauliflower, mushroom, red onion, garlic, olive oil, apple cider vinegar, lemon juice, salt and pepper. Mix until well blended.
3. Spread mixture evenly into the greased baking pan.
4. Bake for 40 minutes. Stir from time to time. When vegetables are soft and golden brown, remove from oven and garnish with green onions. Serve.
Broccoli Cauliflower with Bacon Bits Salad
Prep time: 10 minutes
Cook time: 5-8 minutes
Ingredients:
1 cup broccoli florets
6 bacon slices
1 cup cauliflower florets
2 cups hard-boiled eggs, diced
1 cup cheddar cheese, shredded
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar
Directions:
1. In a deep skillet, cook bacon for 4 minutes over medium heat until all sides are golden brown. Crumble and reserve for later.
2. In a salad bowl, layer broccoli, cauliflower, eggs, cheese and bacon. Follow the order listed.
3. For the dressing, whisk together sugar, vinegar and mayonnaise. Sprinkle on top of layered salad and serve.
