Chicken Noodle Soup
Prep time:
Cook time: 25 minutes
Ingredients:
2 cups chicken, cooked
4 oz egg noodles
4 cups chicken broth
1 cup carrots, chopped
2 teaspoons chicken bouillon
2 teaspoons butter
1 cup celery, sliced
½ cup onions, chopped
1 potato, diced
1 teaspoon poultry seasoning
1 teaspoon thyme
parsley
Directions:
1. Heat a large pot over medium heat and melt butter.
2. Sautee onions, celery and carrots for 2 minutes or until onions are translucent and carrots are tender.
3. Add potato and thyme. Mix for a few seconds and stir in poultry seasoning. Pour in chicken broth and add chicken bouillon. Bring to a boil.
4. Add chicken and noodles. Lower down heat and cook for 20 minutes.
5. Garnish with parsley.
Potato Broccoli Soup
Prep time: 10 minutes
Cook time: 25 minutes
Ingredients:
2 ½ cups broccoli, chopped, steamed
4 cups potatoes, sliced into small cubes
¼ cup flour
1/3 cup onion, chopped
1/3 cup of celery, chopped
3 cups chicken broth
2 cups cheddar cheese, shredded
¼ teaspoon pepper
2 tablespoons butter
2 cups of milk, preferably skim
Pinch of salt
Paprika
Directions:
1. Melt the butter in a saucepan over a medium heat. Once melted, throw in the onions and the celery. Saute until the onions turn translucent. Add the paprika, pepper, salt and flour while stirring. Keep doing so until the mixture becomes smooth.
2. When smooth, combine the chicken broth, potatoes and the milk. Do not forget to keep stirring in order to get a thick consistency.
3. Use a fork to check the firmness of the potatoes. Keep cooking the mixture while checking to see if they have become tender.
4. Once tender, combine the cheese and broccoli. Continue cooking until the cheese has completely melted into the soup.
5. Garnish soup with parsley. Serve.
Oriental-Style Chicken Noodle Soup
Prep time: 10 minutes
Cook time: 15-20 minutes
Ingredients:
12oz skinless chicken breasts, deboned and cut into thin, crosswise strips
1 5oz pack rice noodles
1 garlic clove, minced
2 tablespoons ginger, minced
4 cups napa cabbage, chopped
8 cups chicken broth
1 teaspoon dark sesame oil
½ cup cilantro leaves, chopped
6 scallions, sliced thinly
4 tablespoons rice vinegar
4 tablespoons soy sauce
2 tablespoons mirin
1 tablespoon sugar
½ teaspoon Vietnamese chile paste
Directions:
1. In a small bowl, combine mirin, 1 teaspoon sesame oil, soy sauce, sugar, vinegar, chile paste, garlic and ginger. Mix well. Set aside.
2. Meanwhile, in a medium saucepan, heat broth over medium heat. Stir in soy sauce mixture and chicken. Add all vegetables and bring to a boil.
3. Reduce the heat and allow to simmer for 2 minutes or until chicken is fully cooked. Add in another teaspoon of sesame oil. Stir and season as you wish.
4. Meanwhile, cook rice noodles according to package directions. Drain and transfer in serving bowl.
5. Pour the hot soup over the prepared noodles. Garnish each soup bowl with scallions and cilantro. Serve hot.
