Quinoa with Peas and Walnuts
Preparation Time: 10 minutes

Ingredients:
1 cup quinoa
1 1/2 cups peas
2 cups water
1 onion
1/2 teaspoon salt
2 tablespoons walnuts, chopped
1/4 teaspoon pepper
1 tablespoon olive oil
Directions:
1. Cook quinoa in a saucepan with water. Let it simmer for 15 minutes or until fluffy.
2. Meanwhile, pour olive oil in a skillet. Once hot, sauté onions. Add in peas. Cook for 3 minutes. Season with salt and pepper.
3. Add in pea mixture into the quinoa. Cook for 10 minutes.
4. To serve, garnish quinoa with walnuts.
Quinoa with Parsley, Basil, and Lemon
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
1 1/2 cups quinoa
2 3/4 cups chicken stock
1/4 cup fresh lemon juice
For the Dressing
3/4 cup fresh basil leaves
1/4 cup fresh parsley leaves
1 tablespoon fresh thyme leave
2 teaspoons lemon zest
1/4 cup fresh lemon juice
1/4 cup olive oil
Pinch of salt
Ground black pepper
Directions:
1. To cook the quinoa, pour chicken stock and lemon juice in a deep-bottomed pot.
2. Add in quinoa. Bring to a boil for 15 minutes.
3. While quinoa is cooking, prepare the dressing.
4. In a small bowl, put together salt, lemon juice, parsley, basil, olive oil, salt, pepper, lemon zest, and thyme. Mix well.
5. Once the quinoa is cooked, transfer quinoa to a serving bowl. Drizzle in dressing all over quinoa.
6. Toss the quinoa with a fork to make sure that it is fully coated by the dressing. Serve.
Baked Creamy and Cheesy Potato Hash
Preparation Time: 15 mins
Cook Time: 35-40 mins
Ingredients:
1 bag frozen hash brown potatoes, shredded, partially thawed
8 green onions, chopped
1 can condensed cream of mushroom soup
1 can condensed cream of chicken soup
1/2 cup milk
1 can sour cream
1 cup Cheddar cheese, shredded
Pinch of salt
Pinch of pepper
Butter for greasing
Directions:
1. Preheat oven to 350 degrees Fahrenheit. Grease a rectangular oven dish with butter.
2. Meanwhile, put together all ingredients in a bowl. Season with salt and pepper. Mix well to combine.
3. Transfer mixture to a baking dish. Place inside the oven, uncovered. Bake for 20 minutes.
4. Top with cheese and then bake again for another 15-20 minutes or until the top is golden brown.
5. Take out from the oven and let cool for a few minutes before serving.
Clam and Potato Chowder
Preparation Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
2 cans clams, minced
1 box au gratin potatoes
1 cup broccoli florets
1 onion, chopped
4 cups hot water
3 cups milk
1 cup corn
Pinch of salt
Directions:
1. Pour water in a saucepan. Add in potatoes. Season with salt. Bring to boil for 20 minutes. Drain water.
2. Add sauce mix and the rest of the ingredients. Don't drain water from clams. Add them all in the mixture. Bring to boil again over medium-high heat. Stir occasionally.
3. Decrease heat and simmer for 10 minutes without covering. Stir occasionally. Continue cooking until potatoes are cooked and tender. Serve.
