Tossed Pasta Salad
Preparation time: 10 minutes
Cook Time: 10-15 minutes
Ingredients:
1 box pasta salad mix
4 cups romaine lettuce, torn
1/2 cup red onion, thinly sliced
1 can ripe olives, sliced, drained
2 tomatoes, chopped coarsely
1 cucumber, coarsely chopped
4 oz. feta cheese, crumbled
Directions:
1. Prepare pasta according to the package instructions.
2. Meanwhile, combine seasoning mix, oil, and water.
3. Add pasta and the rest of the ingredients except for cheese.
4. Toss to coat pasta and other ingredients with sauce. Top with crumbled feta cheese. Serve.
Baked Veggie Ziti
Preparation time: 15 minutes
Cook time: 30 minutes
Ingredients:
4 oz. ziti, uncooked
2 garlic cloves, minced
1/2 cup onion, chopped
2 cups tomatoes, chopped
2 cups yellow squash, chopped
2 tbsp. basil, chopped
1/4 cup part-skim ricotta cheese
1 cup zucchini, chopped
1/8 tsp. red pepper, crushed
1 egg, lightly beaten
2 tsps. fresh oregano, chopped
1 cup mozzarella cheese, shredded
Butter, for greasing
1 tbsp. olive oil
Directions
1. Preheat the oven to 400 degrees F.
2. Cook ziti according to package instructions without adding salt and oil. Drain and set aside.
3. Heat olive oil into a large pan over medium-high flame.
4. Add onion and zucchini slices. Sauté for 5 minutes. Stir in garlic and tomatoes and continue sautéing for 3 minutes.
5. Remove from stove then add herbs and 1/2 cup mozzarella. Season with salt and black pepper. Stir to combine ingredients.
6. Mix egg and ricotta cheese in a small bowl. Season with salt. Pour into the pasta mixture and stir.
7. Transfer all ingredients into an 8-inch square oven dish greased with cooking spray or other shortening.
8. Top with the remaining mozzarella.
9. Place inside the oven and bake for 15 minutes until browned and bubbly. Serve.
Tomato and Cheese Fusilli Salad
Preparation time: 10 minutes
Cook time: 20 minutes
Ingredients:
1/2 lb. spiral fusilli pasta
6 sun-dried tomatoes in soil, chopped
1 lb. tomatoes, ripe, diced
1 lb. feta cheese, good quality, medium-diced
3/4 cup black olives, diced
olive oil
Dressing
1 cup parmesan cheese, grated
2 tbsps. red wine vinegar
1 garlic clove, diced
6 tbsp. good olive oil
5 sun-dried tomatoes in oil, drained
1 cup packed flat-leaf parsley, chopped
1 tsp. capers, drained
Pinch of salt
Pinch of black pepper
Directions:
1. Boil a large pot of salted water and a tablespoon of oil in a big saucepan. Cook pasta when the water is starting to boil. Cook for 12 minutes or as instructed in the package. Drain and allow the pasta to cool for a few minutes.
2. Transfer cooked pasta in a large bowl and add sun-dried tomatoes, feta, ripe tomatoes, and olives.
3. Combine vinegar, capers, sun-dried tomatoes, olive oil and garlic in a food processor. Season with salt and pepper. Process until ingredients form a slightly smooth dressing.
4. Top pasta with dressing.
5. Sprinkle parmesan cheese and parsley. Toss together to coat pasta with dressing.
