Chicken Fettuccini Alfredo
Preparation time: 5 minutes

Ingredients:
6 boneless chicken breast halves
1 tablespoon Italian seasoning
1 onion
4 garlic cloves
8 oz Monterey Jack cheese
3/4 teaspoon ground white pepper
3 plum tomatoes
3 cups milk
6 tablespoons butter
3/4 cup grated Parmesan cheese
1 package mushrooms
1/3 cup all-purpose flour
1 pound fettuccini pasta
1 cup half-and-half
1 tablespoon salt
Directions:
1. In a medium-sized skillet, add the butter, Italian seasoning, chicken and garlic.
2. When the chicken is cooked, remove it from the skillet and set aside.
3. In a large pot, add the salt and water then bring them to a boil.
4. Once the water is boiling, add the uncooked pasta and cook it until it becomes al dente or its consistency is firm when you bite it.
5. In a large skillet, add butter to sauté the onions, garlic and mushrooms.
6. When the onions turn translucent, slowly add the salt, milk, flour, half-and-half, cheese and pepper; mix all the ingredients until smooth.
7. Add the chicken mixture, sour cream; tomatoes and heat for at least 5 minutes then remove skillet from the heat.
8. Toss the fettuccini pasta to evenly coat it with the Alfredo sauce.
9. Serve on a large plate and garnish it with freshly grated cheese and parsley.
Penne with Zucchini and Squash
Preparation time: 15 minutes
Cook time: 25 minutes
Total time: 30 min
Ingredients:
Penne pasta
1/3 cup onion, finely chopped
1 small zucchini, sliced
1 summer squash, chopped
½ cup mushrooms, sliced
1 tsp garlic, minced
¼ cup heavy whipping cream
¼ tsp dried thyme
¼ tsp pepper
¼ tsp parsley flakes, dried
1 tbsp. all-purpose flour
½ tsp salt
3 tbsp. butter
Directions:
1. Place the pasta in a pot. Add water and cook according to directions.
2. Place a pan over medium heat. Cook the summer squash, mushrooms, zucchini, onion and garlic in butter. Continue to cook until it is tender.
3. Whisk the flour, cream and seasoning in a bowl until smooth. Add to the pan. Cook for 2 minutes until the mixture is thick.
4. Drain the pasta. Mix in the vegetable mixture. Cook for 2-3 minutes until heated through.
Italian Pasta with Soy Protein
Preparation time: 10 minutes
Cook time: 25 minutes
Ingredients:
¾ cup bow-tie pasta, uncooked
1 1/3 cups frozen sausage style soy protein crumbles
2 cups fresh baby spinach leaves
½ cup onion, chopped
¼ cup mozzarella cheese
18.5 oz can Italian style vegetable soup
1 cup mushrooms, sliced
Directions:
1. Cook the soy crumble, onion and mushrooms in a large pan for 4-6 minutes until it is hot and tender. Stir frequently to avoid burning.
2. Add the soup. Heat until it is boiling. Add the pasta then reduce the heat.
3. Cover and simmer for 10 minutes. Add the spinach. Cook for 3-5 minutes until the spinach is wilted. Top it with the cheese.
Fettuccine Alfredo with Broccoli
Ingredients:
1 package fettuccine
1 cup fresh broccoli
1 tablespoon all-purpose flour
1/4 cup Parmesan cheese
3 tablespoons butter
2/3 cup milk
Cooking oil
Water
Directions:
1. In a medium-sized deep pot, pour salted water and bring it to a boil for 10 minutes.
2. When the water is boiling, add the pasta and oil then cook until pasta is al dente; drain and keep warm.
3. In a large pan, add water and fresh broccoli then bring it to a boil.
4. Once the broccoli is near tender, reduce the stove's heat and simmer the vegetables for about 6 minutes.
5. Meanwhile, in a large pan, add butter, all-purpose flour, cheese and milk then mix until the sauce thickens.
6. Once the broccoli is cooked, serve the warm pasta on a large plate and pour the sauce over it.
7. Gently toss the Fettuccine Alfredo and garnish with Parmesan cheese.
