Spinach Quiche
Preparation time: 15 minutes
Cook time: 35-40 minutes
Ingredients:
1 can mushrooms, drained
4 eggs, beaten
10 oz packed spinach, chopped
1 cup milk
8 oz packed cheddar cheese shredded
3 garlic cloves, chopped
1 onion, chopped
½ cup butter
6 oz packed herb and garlic feta, crumbled
Pinch of salt
Pinch of pepper

9 inch deep dish pie crust
Directions:
1. Preheat the oven at 375 degrees.
2. Melt the butter in a pan. Cook the garlic and onion until it is browned. Stir in the mushrooms, feta, spinach and ½ cup cheddar cheese.
3. Season it with salt and pepper. Spoon the mixture in the pie crust.
4. Combine the eggs and milk in a bowl. Add the salt and pepper. Pour into the pastry shell. Let the egg and spinach mixture combine.
5. Top with the cheddar cheese. Place inside the oven and bake it for 35 minutes until the top is set. Let cool before serving.
Spinach Pie
Preparation time: 15 minutes
Cook time: 30 minutes
Ingredients:
3 eggs
16 oz packed frozen spinach, chopped
½ cup Swiss cheese, shredded
½ tsp ground black pepper
1 ½ cups heavy cream
2 tbsp. butter
½ tsp ground nutmeg
½ tsp salt
2 tbsp. onion, chopped
Directions:
1. Set the oven at 375 degrees. Coat the inside of the pie pan with cooking spray.
2. Melt 2 tbsp. butter in a large pan. Add the onions and cook until it is tender.
3. Squeeze excess liquid from the spinach then add it to the pan. Cook until the spinach is completely heated through.
4. Transfer the mixture to the pan.
5. Beat the eggs and cream in a large bowl. Add the nutmeg, salt and pepper. Pour it into a pan and top with the Swiss cheese.
6. Top with 1 tbsp butter. Bake for 30 minutes until the top is golden brown. Let it cool before serving.
Creamy Spinach Rice
Preparation time: 10 minutes
Cook time: 25 minutes
Ingredients:
10 oz pack spinach, chopped
1/3 cup brown rice, uncooked
1 can condense cream of chicken soup
½ cup onion, chopped
2 tbsp. butter
2 fresh peppers, chopped
4 oz processed cheese food, cubed
¼ cup milk
2/3 cup water
½ tsp salt
¼ tsp ground black pepper
Directions:
1. Preheat the oven at 350 degrees. Grease the inside of the baking dish.
2. Boil the water and brown rice in a pot. Cover and simmer for 20 minutes.
3. Combine the jalapeno pepper, soup, salt, milk and pepper.
4. Melt the butter in a large pan over medium heat. Add the onion and cook until soft.
5. Stir in the spinach and cooked rice. Pour the soup to the pan. Cook until it is heated through.
6. Add the processed cheese then transfer to the baking dish. Bake for 25 minutes until it is slightly browned.
Creamy and Cheesy Spinach and Artichoke Sauce
Preparation time: 15 minutes
Cook time: 30 minutes
Ingredients
14 oz can artichoke hearts, chopped
10 oz box frozen spinach, chopped
1 cup cream cheese
2 tsp garlic, minced
2 cups Parmesan cheese
1/3 cup mayonnaise
2/3 cup sour cream
Directions:
1. Preheat the oven at 375 degrees.
2. Combine the artichoke hearts, spinach and Parmesan cheese in a dish.
3. Combine all of the remaining ingredients then add to the spinach.
4. Bake for 20-30 minutes until the mixture is creamy. You can serve this dip for chips or spread it in toasted bread.
