Falafel and Hummus Salad
Preparation time: 15 minutes
Cook time: 25 minutes
Ingredients:
2 round pita bread
1 packet 200 grams falafel mix, store-bought
4 radishes, sliced thinly into strips
1/3 cup rice bran oil
1 cucumber, sliced into thick strips
1 green capsicum
½ cup cherry tomatoes
1 cup fresh mint leaves
1/4 teaspoon mild chili powder
1 small red onion, sliced into wedges
1 cup parsley leaves
For the Hummus Dressing
125 grams Hummus
1 tablespoon olive oil
2 tablespoons lemon juice
Directions:
1. In a pan, cook bread in rice bran oil. Stir constantly to prevent from sticking to the bottom of the pan. Cook until golden brown.
2. Transfer bread to a baking tray. Let cool for a minute.
3. Using the same pan, prepare the falafel mixture by following the store-bought falafel mix instructions by adding 1 and ¼ cup of water, 1 and ¾ cup of the mix and oil.
4. Do this in a large bowl and mix well; let it stand for about 15 minutes and add chili powder, pepper and salt to taste.
5. Add in olive oil and cook the patties until they turn golden brown.
6. After cooking, line the patties on a baking sheet and set aside.
7. Prepare the dressing by combining the hummus, lemon juice and olive oil in a bowl.
8. After mixing the dressing ingredients, place them in a small bottle where you can close the lid and shake.
9. To serve, arrange tomato, capsicum, radish, cucumber, bread, mint, falafel and parsley on a plate.
10. Toss the greens to be coated by the dip. Put the Hummus dressing on a small side dish for the pita bread dip. Serve.
Chicken Salad with Pineapple and Cranberries
Preparation time: (can be done a day ahead)
Cook time: 15 minutes
Ingredients:
4 cups chicken, cooked
1 can pineapple
2/3 cup dried cranberries
1 cup mayonnaise
1 package cream cheese
2 teaspoons curry powder
1 cup salted almonds
1 teaspoon salt
Directions:
1. In a large bowl, add the cream cheese, salt and curry powder.
2. Whisk the ingredients until the cheese is fully coated by curry, and then mix the pineapple, cranberries and chicken.
3. Transfer the mixture on a plastic covered round cake pan and refrigerate overnight.
4. The following day, remove the plastic cover and invert the cake pan on a plate.
5. Toss the Creamy Chicken Salad and garnish with chopped almonds and cranberries on top.
6. Serve on a plate and enjoy.
Berries Spinach Salad
Preparation time: 10 minutes

Ingredients:
Red wine vinaigrette
2 bags baby spinach
1/4 red onion
1 package blue cheese
1 bag Strawberries
Pinch of salt
Pinch of pepper
1/2 cup almonds, toasted
Directions:
1. In a small bowl, mix red onions, baby spinach, quartered fresh strawberries, crumbled blue cheese and toasted almond.
2. Drizzle the red wine vinegar and toss the vegetables to fully coat it.
3. Garnish with extra crumbled blue cheese and enjoy this light Summer Spinach and Berries Salad.
