Roast POrk Chops with Artichokes and Potatoes
Prep time: 10 minutes
Cook time: 25-30 minutes
Ingredients:
1/2 teaspoon coriander powder
salt
pepper
2 thick bone-in pork chops
2 tablespoons olive oil
9 ounces frozen artichokes hearts, thawed
8 ounces baby new potatoes, scrubbed and halved
2 1/2 cups sodium free chicken stock
4 springs of thyme
1 1/2 tablespoons white balsamic vinegar
3 tablespoons unsalted butter
Directions:
1. Position a rack in the center of the oven and preheat to 400F.
2. Season the pork chops with the coriander, salt and pepper all over.
Heat oil in a large skillet over medium-high heat and sear the chops while basting the oil over them until they are of a golden deep brown color.
Using a pair of thongs, you do not want to pierce the meat, lift the meat and sear the other side. Total of 4 minutes.
Transfer the chops to a plate.
3. Add the artichokes and potatoes to the pan. Stirring occasionally, until browned on spots, cook for about 3 minutes. Add the garlic and cook stirring for a few seconds.
Add 1 ½ cup of the chicken broth to the pan and scrape any browned bits.
Cook until the potatoes are tender, 3 to 5 minutes (depending of the potatoes size)
Return the chops back to the pan, add the thyme and place in the hot oven for about 5 to 6 minutes.
4. Leave the thyme springs in the pan, transfer the chops and vegetables to a plate and cover with aluminum foil.
Return the skillet to the stovetop over medium heat and reduce the liquid in the pan until almost completely evaporated, 2 minutes. Add the vinegar, stirring to scrape up any bits from the bottom of the pan.
Add the remaining 1 cup of chicken broth and bring to a boil. Remove the thyme springs and whisk in the butter.
5. Cook to reduce slightly, about 2 minutes and season to taste with salt and pepper. Return the vegetables to the pan. Add the pork chops and spoon some sauce over the top.
6.Arrange potatoes and artichokes on a plate and top with the pork chop.
Salmon Canapes
Prep time: 15 minutes
Cook time: 5 minutes
Ingredients:
1 French Baguette
8 ounces thinly sliced smoked salmon
8 ounces cream cheese softened
1/2 cup sour cream
dill springs
Directions:
1. Preheat the oven to 400F. Cut the baguette into 24 rounds, ½ inch thick, and place on a baking sheet.
2. Place oven rack in the middle of the oven. Bake the baguette rounds for 5 minutes or until slightly toasted. Remove to wire racks to cool down.
3. Cut the salmon into 24 pieces. Spread the baguette evenly with the cream cheese, and top with smoked salmon and sour cream. Place a dill spring on each canape
Eggplant Rigatoni
Prep time: 10 minutes
Cook time: 20 minutes
Ingredients:
1 eggplant, peeled, sliced and each slice quartered
1/2 onion, peeled and finely chopped
salt
pepper
1 27-ounces can strained tomatoes
2 tablespoons olive oil
vegetable oil for frying
parmesan cheese
Directions:
1.Placed the eggplant on a cutting board and sprinkle with salt. Let rest for 20 minutes with a heavy weight over. Rinse and pat dry.
FOR THE SAUCE
1. Heat olive oil in a sauce pan add the garlic and brown it. Once the garlic is brown on all sides discard.
2. Add the onions and saute until tender.
Add the tomatoes to the saucepan and gently simmer for 20 minutes. Season with salt and pepper.
FOR THE EGGPLANT:
1. In a large skillet add the oil and heat to high, should be hot but not smoking. Fry the eggplant in batches until golden, 2 minutes. Remove and rest on paper towels to drain oil.
ASSEMBLY:
1. When finished with the eggplants add them to the tomato sauce and simmer at low until the pasta is cooked.
2. In a large pot of salted water cook the tortiglioni or any tubular pasta according to package directions
3. Serve with the tomato eggplant. Shave some parmesan cheese over of desired.erve.
