Ingredients:
2 zucchinis, sliced in small rounds
1 squash, sliced in small rounds
fresh thyme
olive oil
salt and pepper
18 ounces cherry tomatoes
1 tablespoon unsalted butter
1/2 yellow onion
Directions:
1. In a heavy cast enamel oval gratin dish, smear the butter all over the bottom and sides.
Arrange the slices of zucchini and squash, alternating them. Leave some open space in the middle. Place the cut tomatoes in the middle of the dish.
2. Preheat oven at 350F.
3. In a small skillet with 1 teaspoon of olive oil, sauté the onion over medium heat until translucent. Add some fresh thyme while cooking and season with salt and pepper.
4. When done, 5 to 8 minutes, gently sprinkle them over the zucchini, squash and tomatoes. Season with salt and pepper, fresh thyme and a generous amount of olive oil.
5. Place in the preheated oven and cook for 15 to 20 minutes.
6. Serve hot or at room temperature.
Salmon Canapes
Prep Time: 15 minutes

Ingredients:
1 French Baguette
8 ounces thinly sliced smoked salmon
8 ounces cream cheese softened
1/2 cup sour cream
dill springs
Directions:
1. Preheat the oven to 400F. Cut the baguette into 24 rounds, ½ inch thick, and place on a baking sheet.
2. Place oven rack in the middle of the oven. Bake the baguette rounds for 5 minutes or until slightly toasted. Remove to wire racks to cool down.
3. Cut the salmon into 24 pieces. Spread the baguette evenly with the cream cheese, and top with smoked salmon and sour cream. Place a dill spring on each canape
Chicken and Potatoes Tortilla
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients:
1 tablespoon unsalted butter
1 tablespoon olive oil
2 peeled and cut into dices potatoes
leftover cut into small pieces chicken
4 egg(s)
Directions:
1.Preheat the broil of the oven.
2. In a large saucepan filled with salted water, cook the potatoes cubes until tender, but not falling apart. Drain and set aside.
3. In a large bowl mix the eggs with salt and pepper.
4. In a large ovenproof skillet, over medium heat melt the better and add the olive oil. Add the chicken pieces and sauté them until warm. Add the potatoes and cook the chicken and the potatoes for 3 minutes.
5. Add the eggs mixture and the parsley and cook until the eggs are starting to cook underneath the chicken and potatoes and around the edges of the skillet.
6. Place the skillet under the broiler and cook until nicely golden and the eggs are no longer soft, around 6 to minutes.
7. Serve in wedges.
