carbohydrates are the most used "go to" food around.

Everything we eat is composed of some combination of protein,
fat, and carbohydrate.

Why do people count carbs? Generally carbohydrates cause
blood sugar levels to rise quickly while fat and protein cause blood sugar
to rise more slowly.
Our bodies respond to a a rise in blood sugar by releasing insulin,
this hormone is required to bring blood sugar into cells or fat tissue.
If you eat excessive amounts of carbohydrates, the insulin cycle can become
imbalanced, resulting in continually raised insulin levels.
High insulin levels have been related to obesity in addition to increased risk for
heart disease and blood sugar imbalances.
Controlled carb diets may promote a gradual fluctuation of insulin
and are therefore more satisfying In high protein/controlled carb diets,
it is thought that weight loss occurs through consumption of fewer calories
arising from increased satiety.

Weight loss also occurs because very low carb intake triggers a condition called ketosis,
which forces the body to burn fat stores. Ketosis is a metabolic process that occurs when
the body does not have enough glucose for energy. Stored fats are broken down,
resulting in a build-up of acids called ketones within the body.
Some people encourage ketosis by following a diet called the ketogenic or low-carb high fat diet.
The aim of the diet is to try and burn off unwanted fat by forcing the body to rely
on burning fat for energy, rather than carbohydrates.,
Think of it as flipping a switch in your body to pure fat-burning-for-fuel mode.

Ketosis and Accelerated Fat Loss
Being in ketosis has a positive effect on hormone regulation mainly blood sugar regulation.
Blood sugar spikes trigger both fat storage and future hunger.
Above a certain intake (or a chronically high intake), sugar is toxic and your body has
to do something with all of the excess you're ingesting.

Such effects have been associated with diabetes, overeating, and obesity.
Low glycemic index foods, such as, foods high in fiber and protein, promote a steadier
blood sugar level and have been shown to lower cholesterol levels and decrease the risk of diabetes.
Many controlled carb diets recommend eating low glycemic index foods, such as beans, dairy products,
fruits, and vegetables. Keep in mind that the glycemic index of a food may be balanced
in the context of a meal where several foods of varying glycemic levels are consumed.

You don't have to live in a ketogenic state for the rest of your life; or be scared of eating a little sweet potato, this sends the wrong message and will only deter more people from becoming low carb eaters. Be sensible, use common sense, and let's get more people eating a whole lot better than the typical Western Diet.
