You might be wondering how a simple baking mat can be considered, as perhaps, one of the best perfect kitchen partners. Well, it is for the simplest of all reasons; it provides you a healthy dish out of it.
Baking requires enclosed space for the heat; typically, an oven is best used. Some use traditional ovens while some use conventional ovens. Either way, you cannot bake directly with just the oven itself. You need to get your hands on a baking pan, but it just does not end there.
Using only your baking pan will let you grease the pan first before you can pour your batter to avoid it from sticking and giving you a hard time of removing the baked good. You would not want a cake split in half due to all the trouble of de-panning, or brownies cracking because they got stuck in the pan. Even cookies will crumble without your trusty baking mat.
So, that is where it all comes in. The plain baking mat is one thing which will give you the opportunity to save time when greasing the pan, de-panning your goodies, and cleaning the pan itself.
When baking, natural fats from ingredients will melt, which is actually additional grease, so why skip the baking mat? Certain microorganisms die as sugar dissolves, so it is best to avoid direct contact to the aluminum or tin pans which also have their own microbes which can affect the goodies being cooked or baked.
Because caramelization (which is the browning of sugar) and Maillard reaction (which includes sugar breaking down with the presence of proteins) occur during the baking process, the melted sugar sometimes sticks to the pan which is quite hard to get out. With the use of a mat, this too can be avoided.
Baking involves dry heat which changes the starches and their form which then causes the outer surface or what we can refer to as the crust to brown. This, though, gives an attractive appearance and taste to the product itself. This dry state would be almost impossible to take off the pan without a mat.
However, baking does not always require fat or any type of oil to cook in the oven. It is but considerably an option if you are using the regular pans which do not have the non-stick feature. Higher levels of fat that can be taken from margarine, butter or lard may be used if you do not have a mat.
In most cases, the perfect kitchen partner does not at all exclusively refer to your cookware or bakeware, but sometimes, the instinct or logic or common sense itself.
In a perfect world, one would require something that can be seen or touched to be considered as a perfect kitchen partner, though in the real world, something intangible is most probably the best thing ever, and that is the skill and know-how.
