Some health experts believe that this polyphenol compound prevent the release of glucose in the blood. As glucose are released and pass through the bloodstream following a consumption of solid food and beverage, the liver acts to release insulin. This in turn keeps the unused glucose as stored fat. The chlorogenic acid delays glucose to be absorbed in the blood. When this happens, it decreased fat being absorbed and is believed to make the liver process fat more quickly.
