Ingredients
- 3 cups of Chicken Broth
- 2 cups of water
- ½ cup of Green Onions
- Soy Sauce
- 3 Garlic Cloves
- ½ tsp. of Ginger
- 2½ cups of Bok Choy
- Bell Peppers
- Pasta or Noodle
- 1½ cup of Cooked Chicken
- Chinese Spice Powder
Procedure
- Chop ginger and garlic finely or prepare a paste from them.
- Chop bok choy, bell chicken and pepper.
- Cook the noodles and then break them to form small pieces.
- Mix water, Chinese spice powder, chicken broth, the garlic and soy sauce and ginger paste in a sauce pan.
- Stir and boil the mixture.
- When boiling begins, add bell peppers and the chopped bok choy.
- Leave them to cook for some time.
- Add the chicken and cooked noodles.
- Adjust the pepper salt.
- Serve hot.

Ingredients
- 3 Cucumbers
- 4 Tomatoes
- 2 Spring Onions
- 2 ounces of Feta Cheese
- A few pieces of Olives
- Lettuces of any kind

- Salt and Chili Flakes
Procedure
- Chop the tomatoes, cucumbers and feta cheese into small cubes.
- Chop the olives and spring onions in small rounds.
- Wash and then dry the lettuce. Divide them to form small pieces.
- Mix all the vegetables in a bowl and keep them aside.
- Mix olive oil, salt, lemon juice and chili flakes in a small bowl and then thoroughly mix them.
- Pour this dressing on top of the chopped vegetables.
- Garnish with grated cheese (optional)
Diabetic Recipes: Spaghetti
Ingredients
- 1½ cups of Basil leaves
- 4 Garlic Cloves
- 3 tbsp. of Olive oil
- ½ cup of Pine Nuts
- 3 tbsp. of parmesan Cheese
- 8 ounces of Spaghetti
- Pepper and Salt to taste
Procedure
- Cook the spaghetti by following the instruction on its packet and then keep aside.
- Remove the basil stems and wash its leaves thoroughly.
- Chop garlic cloves finely and toast few pine nuts.
- Mix all the ingredients minus the spaghetti in the blender to make a sauce, and then puree the mixture.
- Place spaghetti in a bowl and then pour the sauce on top of the hot spaghetti.
- Serve immediately.
Diabetic Recipes: Sweet Hummus
Ingredients
- 1 tbsp. of Olive Oil
- 1½ tbsp. of Fresh Lemon juice
- 2 tbsp. of Parsley
- 2 tbsp. of Artificial Sweetener
- 1 can of Garbanzo Beans
- 2 cups of Bell Peppers
- Pepper and Salt to taste
Procedure
- Chop the parsley and bell peppers.
- Sauté bell peppers in olive oil using a saucepan.
- In a food processor or blender, mix all the ingredients and then grind to form a smooth mixture.
- Refrigerate the hummus till the time for serving it.
