There are many good cooking schools around the country that teach culinary arts and hospitality management. Some schools make a better fit than others for certain students. Some of the culinary schools in New York, New Jersey and Maryland sit near the head of the culinary arts industry. Overall there are four traits to look for in a top cooking school. Wherever one is looking to attend a hospitality college, it can pay to compare the schools on one's short list against this checklist to see how they measure up.
First, students should decide on length of the program that will best fit their needs. A four year degree may not be necessary; a certificate could be sufficient for obtaining the job the student wants. Students are encouraged to review schools' websites for program information and then visit the schools in person to talk with advisors. After several of these trips it will be easier to compare multiple schools to see how their programs fit in with a student's goals.
Secondly, it's important to examine the instructors' credentials. Most cooking schools will employ instructors with extensive experience, but a bit of additional investigation can uncover schools with courses taught by award-winning chefs. It will depend of course on what the student is looking for in a faculty, but it isn't necessary to settle for any school that claims it employs award-winning chefs. There are some schools that offer courses taught by chefs who have produced popular cooking shows. There are many schools that offer instruction by chefs who specialize in a particular type of dish, such as sushi. Students are encouraged to find those chefs that are experts in the dishes that they would like to learn to cook well.
Third, students need to weigh the variety of restaurant immersion experiences offered by the school. Many schools run restaurants that are open to the public; and some of these restaurants have won awards for their exemplary cuisine. When students are comparing schools, it's a good idea to visit these restaurants and try to talk to the students who work there. What have their experiences been like? Most of these restaurants are themed. Prospective students who wish to learn to cook Italian, American, French and other types of cuisine can investigate which of these restaurant settings each school offers.
Lastly, it's crucial to carefully compare the financial aid available at each school. Each school's financial aid office will help students explore state and federal loan options. There are a variety of work study opportunities which can help cover expenses. Students can also ask about military and veterans scholarships. Most schools offer their own scholarships as well and it pays to ask about these in advance of one's target date for entering the school. Some of these scholarships are based on actual culinary competitions between enrolled full-time students at a school. Another financial aid source that schools provide is a list of external sources; some scholarships are funded by local agencies and some are national and merit based.
Culinary school quality varies widely. It's recommended that in addition to using this four point checklist that students create a goals list. The goals list should include a prospective date for graduation and a few jobs (at least one primary and one secondary interest) that the student would like to try to obtain after graduation. Finding the right culinary school will take some research. This exploration and goal setting by students can help make attending culinary school a meaningful experience.
