Ceviche is a seafood dish native to the ocean-side areas of South and Central American. It is customarily made with raw fish that is marinaded, or prepared, in lime juice, however shrimp and additional seafood are preferred for addition in a ceviche recipe. Components
1 pound of shrimp, striped and deveined
2 garlic cloves, crushed or carefully cut
1 tbsp. olive oil
1/4 pound. crab meat or fake crabmeat
1 huge onion, cut carefully
4 big ripe tomatoes, cut
1 ripe avocado, diced
2 cucumbers, striped, seeded and cut
5 limes, juiced
1 cup clamato juice
2/3 lot sliced cilantro
Salt and pepper to taste
Tostadas or tortilla chips
Preparation
Pour olive oil in a shallow pan and roast your garlic over medium heat, recently till it starts to obtain a golden color scheme-- beware not to let it burn. Place the shrimp into the pan. Toss it to coat with garlic and olive oil. Sprinkle salt and pepper to taste. Shrimp cook rapidly, so beware not to overcook them. Remove from heat and reserved.
2) Finely dice the fake crabmeat and set it apart.
3) Finely dice the red onion, tomatoes and avocado, and toss them into a big bowl. Include the lime juice to the onions and tomato mix.
4) Peel the cucumber. Cut the cucumber lengthwise and remove the seeds by scooping them out with a little spoon. Carefully dice the cucumber and toss it into the bowl with the tomato and onion.
5) Finely dice the cilantro and include it to the mix.
6) Add shrimp, crabmeat and Clamato to the combination. Toss all components to blend together. Sprinkle with salt and pepper to taste.
7) Serve on a tostada or in a bowl with tortilla chips on the side. Leave out the tostadas and tortilla chips for a low-carb dish.
