Andouille is a very delicious and popular sausage that originated in France. Before the French came up with the recipe above, though, Andouille is simply made with the stomach and large intestines of the pig. This is heavily seasoned and smoked.
A less exotic sausage is the breakfast sausage. The sausage ingredients for this are not so different from the ingredients used in Andouille. It also utilizes pork butts that were boned, table salt, nutmeg, thyme cayenne pepper and ice water. These are the same ingredients that a breakfast sausage and an Andouille have.
Other sausage ingredients of the breakfast sausage are ground white pepper, rubbed sage and ginger. These are the ingredients that make the breakfast sausage distinct from the Andouille. The table salt used for the Andouille and breakfast sausage is kosher salt.
Italians, being known for their food, also have a version of sausage. Just like the above sausages, the hot-sweet Italian sausage makes use of boned but of a pork, kosher salt and garlic powder. The rest of its ingredients are unique . The Italian sausage makes use of a cold red wine, fennel, ground black pepper and coriander, pepper flakes, oregano (for a touch and a smell of herbs), sugar, caraway seeds, and also MSG.
