Memphis barbecue generally means two different dishes, one is rib that comes as "dry" and "wet" and the other is barbecue sandwich. Memphis barbecue draws the attractions of the foodies for its 'tomato- vinegar' sauces. To make dry ribs the meat is seasoned with dry rubs and then smoked over the hickory woods. One and half cups wood chunks (preferably hickory) or chips need to be soaked for an hour in cold water for covering and draining
Ingredients needed for making Memphis Barbecue
to make ribs and rub you will need the following
Three racks of baby pork rib (back) and weight about seven pounds. You can also take two racks of pork spareribs
One fourth cup of sweet paprika
Four and half teaspoons of black pepper (freshly ground)
Four and half teaspoons of dark brown sugar
One tablespoon salt
One and half teaspoons of celery salt
One and half teaspoons of cayenne pepper
One and half teaspoons of garlic powder
One and half teaspoons of dry mustard
One and half teaspoons of ground cumin
To make the mop sauce you will require the following. However, this sauce is optional
Two cups of cider vinegar
Half cup of yellow mustard
Two teaspoons of salt
Preparation of Memphis Barbecue
To prepare the ribs as well as rub you have to remove the papery and thin skin from the back of ribs' rack. You can pull it off by your fingers in a sheet or you can also use a kitchen towel's corner. Pliers are also used for removing the skin.
The next step is to mix all the ingredients like cumin, dry mustard, garlic powder, cayenne, celery salt, salt, brown sugar, black pepper, and paprika in a bowl. Mix them and then rub 2/3 of this mixture on both sides of the ribs. Now put all the rubbed ribs on a roasting pan. Cover the pan and refrigerate it for four to eight hours.
Meanwhile start preparing the mop sauce by mixing together mustard, cider vinegar, and salt.
The next step is to setting up the grill for an indirect grilling. You have to place a drip pan (large) in the center.
If you are using any gas grill, place the wood chips or chunks in a smoker box. Then preheat that grill to high and when smoke will appear you have to reduce its heat to medium.
When it is ready for cooking arrange the ready-to-cook ribs on the 'hot grate' over the drip pan. Now, cover the grill. You have to smoke cook those ribs for an hour.
Uncovering the grill, after one hour, brush the ribs using mop sauce. When it is done recover the grill to continue cooking of the ribs and cook them until they appear tender. You can season the ribs with the rubs remaining, but do this seasoning before 15 minutes of the taking out the ribs from the grill.
