These types of cellars maintain a cool temperature naturally. These are usually found in basements or caverns below houses where it is normally cool and damp.

There are also active cellars that have internal climate controls that ensure the room is within the perfect temperature in keeping wine, which is approximately around 12 to 16 degrees Celsius. Wine cellars may they be passive or active, are built so that the wines are stored horizontally on the rack. This is done for the same reason why cellars are kept humid - to ensure that the wine bottle's cork is dampened.

These cellars also ensure that lighting and vibrations in the area are constant. There should not be too much light exposure as harsh lights can cause sediments to emerge. And the reason why the wine is kept at a very level and stable environment is because vibrations from traffic also cause aged wine to get sediments. Thus, it is not ideal to have a cellar where human traffic is continuous. The cellar's location should not only be cool, dark and damp, it should also be traffic-free.

Thus, if you have a great collection of good and rare wines, it is really a good idea to invest on a cellar. Wine cellars may be costly but the benefits one can reap from maintaining a good environment for the aging wine is priceless.
