However, for hard, thick bones, it is advisable to use a bone saw (manual or electric powered) instead of a cleaver. The flat side of a cleaver can also be used for crushing garlic and other spices.
Fillet Knife - fillet knives are specialized boning knives, and are even more flexible than boning knives. Having blades 6-11 inches long, and being so flexible it can be bent almost in half without breaking, fillet knives are able to slide along the backbone of a fish easily.
Fork knife - also known as a carving knife, fork knives are used to hold the meat in place when slicing the meat. It is also sometimes used to transfer bits and pieces of meat from one pan to another, and can also be used to test the tenderness of a meat you are cooking.
Paring Knife - paring knives or coring knives are the smallest knives you will find in a kitchen. It is used for peeling and trimming, and for other delicate tasks such as de-veining shrimps, removing seeds from a fruit, or cutting small garnishes.
