If you're into barbecue and you love pork, then you'll love these two awesome pork barbecue recipes:
Barbecue grilled pork steak
- Pork steaks, 4 pieces, 4-6 inches in diameter just under half an inch thick
- 1 ½ tbsp flour
- 1 tsp salt
- ½ tsp freshly ground pepper
- ½ ripe sweet red pepper, grated very fine
- ½ to 1 tbsp of water
- A pinch of cayenne pepper
- 2 tsp caraway seeds
How to Cook:
1. Wipe softly the steaks using a dry cloth. Trim the meat but not the small fat thread from the edge, and score the rough edges in different places to prevent the meat from curling.
2. Mix the flour, salt, red and white pepper in water to make a thin paste. Dip the steaks in this paste and grill it over high heat. Cook each side quickly for 1 minute just to set the coating. Then, cook each side again for 12-15 minutes, turning the steaks often to avoid the steak from burning.
3. While you are cooking the steaks, heat the cayenne pepper and caraway seeds in a twist of aluminum foil.
4. Once the steaks are cooked, sprinkle it with the seasoned caraway seeds and serve.
Brined rosemary pork chops
Soaking the pork in brine allows for the flavors to sink in and be absorbed in the meat.
- 3 tbsp kosher salt
- 3 tbsp light brown sugar
- 2 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp freshly ground black pepper
- 3 whole branches of fresh rosemary
- 4 bone-in loin pork chops, 1 inch thick each
- Extra-virgin olive oil
How to cook:
Making the brine
1. In a bowl, mix the salt and sugar.
2. Add a cup of hot water and mix the salt and sugar.
3. Add another 2 cups of cold water and the remaining brine ingredients (the olive oil, vinegar, black pepper, rosemary)
Marinating the pork
1. Put the pork in a large, Ziploc bag and pour the brine in.
2. Press the air out of the bag completely before sealing.
3. Shake the bag slightly to distribute the brine.
4. Refrigerate for 4-6 hours.
Cooking the Pork:
1. Remove the pork chops from the bag and pat dry with paper towels.
2. Brush both sides of the pork with oil and allow to stand for 20 minutes.
3. Sear the pork chops over direct high heat for 6 minutes, turning once halfway into 3 minutes.
4. Switch over to indirect medium heat afterwards and continue cooking until the juices run clear for 6 to 8 minutes more.
5. Serve warm with your choice of side dish.
